St. George Spirits pays close attention to which ingredients are distilled at what point in the process. Fir and sage are distilled individually in a 250-liter still to minimize their impact on seasonal variations. The California bay laurel leaves and juniper berries are vapor-infused in a botanicals basket. All other botanicals are added to the 1,500-liter still.
