Don’t let the name fool you, this simple, sweet cocktail is a deliciously fruity delight. Based around Knappogue Castle’s versatile 12-year whiskey, the Shoe Maker is easy to make and even easier to drink. The whiskey and sherry blend smoothly together while the fresh fruit selection of the orange slice and raspberries give this cocktail a crisp, clean taste. Shoe Maker

2 oz Knappogue Castle 12 Year Old
1 oz Fino sherry
½ oz Simple syrup
1 dash orange bitters
2 Raspberries
Orange Slice
Mint sprig
Orange peel

Add dash of bitters, raspberries, orange slice & simple syrup to a shaker and muddle. Add sherry, the Knappogue, ice and shake. Double strain into old fashioned glass and top with crushed ice. Twist a slice of orange peel over the drink to release the oils and discard the peel. Garnish with mint sprig and raspberry.
